So this week in our CSA assortment, we received:

-mustard greens
-chilis
-baby bok choi
-tat soi
-butternut squash
-sweet potatoes

Not to mention the fact that I bought a huge bunch of red chard last week.

Can you say LEAFY GREENS? I bet my mom is real proud of how many greens I eat now.

That said, mustard greens. Any ideas? All I know is that they're spicy. Bonus points if you can think of ways to use more than one veggie at once.

Also: I think I'm going to use the chilis to make chili relleno (literally, "stuffed chili"): stuff those puppies with cheese, batter, and fry. Yum!

Edited to add: I spelled "chile" wrong. Please go back through and substitute the word "chile" where I put "chili" as you read this.

Someone one invited me for dinner and fed me a really tasty calzone-sort of thing - I believe mustard greens were a lot of the contents. You could use a lot of your greens up that way, actually. Add cheese and maybe some sauce, or keep the sauce on the side and you're good to go.

When I was working at Pasta & Co, they had this dish with mustard greens that I loved. What made it even better was I ate a ton of it during the first trimester of my pregnancy. It was LOADED with folic acid.
Anyways what you could do is make a salad with black eyed peas and mustard greens. It should also have green onions, maybe some finely chopped red bell pepper, green onions and a Vinaigrette. That is how I like to eat mustard greens.

Alton Brown had an episode on greens such as this. Two of his three recipes were without meat:

Mustard Green Gratin

Lemon Sesame Glazed Greens

I don't have much experience with such hearty greens (mom's from South Africa), but what I do have usually includes large amounts of bacon fat.
