There were some items I wanted from the farmer's market, so yesterday morning
scrottie and I geared up and rode over to Troy. The morning forecast was for freezing rain turning to liquid rain, but by the time we left the house the roads were generally clear. It felt really good to get out on a bike ride, although with the wet roads S wound up completely covered in salt and grime, because his bikes do not have any fenders. Also, the bike paths here don't get plowed regularly in the winter, so we had to jostle for space with cars on the road. After living in places where the bike paths are often the first thing to get plowed, this situation still bothers me.
At the market I was able to get some ingredients to assemble a Spinach and Gruyere Breakfast Casserole thing I'd read about in the NYT. That helped with the project of going through all the things in the freezers, because it used half of the bread ends we've accumulated. The casserole is in the oven this morning.
I also assembled and baked some enchiladas. Enchiladas are usually S's specialty, but he has some end-of-year time constraints so I'm trying to get the weekly cooking done myself. I was relieved that they came out fine.
I also made an experimental batch of cherry-currant-raspberry jam, with the year's harvest of blackcurrants and raspberries. Altogether I think the flavor came out all right. The blackcurrants are kind of bitter, but I think the sugar balanced that out all right.
There's still a fair amount of other random fruit in the freezer, but it will have to wait for some other week. Just as I've enjoyed helping others with random pantry items, it's satisfying to tackle freezer maintenance so we don't wind up with too many mummified, freezer-burned things. But it's definitely a long-term project.
