Hungry hungry hungry
Dec. 2nd, 2011 02:03 pmSo, after only three days of Holiday Challenging, my body has definitely kicked into high calorie-demand mode. This has probably been exacerbated by the fact that I keep getting home kinda late for dinner, and then only make half-assed attempts at making dinner. Tuesday night was pretty good, two red lentil curry burgers. Wednesday was a plate of nachos and then a cheese quesadilla (without any fun fixins) as I rushed off to the grocery store. Last night was mac'n'cheese from a box, plus mushrooms, onions, and tomatoes, scarfed down in a hurry so I could listen to a webinar on an R package I've been using (ggplot2).
Lunches haven't been that much better, due to a lack of yogurt. One of my staple lunches consists of a sandwich, yogurt+nuts+honey+cinnamon, some kind of fruit, and a baked good or piece of delicious chocolate. Right now the sandwiches are peanut butter and jelly, but if my lettuce plants ever get large enough, I'll switch over to cheese+veggies+lettuce. Or maybe it's time to get the sprouting jar out again.
Fortunately, I finally made some yogurt last night, and I have some good cooking plans for the weekend as well. Yeesh, these days, I'm making my own bread, yogurt, (occasionally cheese), salsa, and pretty soon I'll try my hand at mustard. My efforts motivated by a combination of my particular tastes, my economic situation, and the timing of things. I haven't found any good sandwich bread sources around here, for instance, and the Nancy's yogurt available at the natural foods store costs twice as much as it did in Arizona. I also got spoiled by the Dromgold mustard in Arizona. It's also hard to make it over to the natural foods store on weekdays.
