Meal Prep Sundays / Crumpeteria [food]

My head is abuzz with trying to think about the things I need to remember for teaching tomorrow. I'm going to forget something, I just know it.

I made broccoli-chickpea burritos for the week. I still have a bunch of leftover kung pao Ficken, and I got some marinara out of the freezer just in case.

I wanted to try skipping the grocery store this weekend, so I also baked a loaf of bread, and decided to finally try out my new crumpet-making setup:







Unfortunately I didn't get the batter quite right this time, so there aren't a lot of delicious pores to hold the butter:


But they're edible and I can toast them in the toaster at work, for breakfast, while reminiscing about the research trip to Australia where I fell in love with crumpets.

I'll probably just continue to make pancakes most of the time, because making these is fussy and time-consuming.

Oh yes!

I find they are enough work to make, that if there were a place selling them anywhere nearby, I'd be there in a flash! For some reason Americans go for English muffins but not crumpets.

I hadn't realized folks would enjoy them with marmite, but I should have. I haven't developed a taste for it but I can appreciate those who enjoy it. I'm just a fan of the delicious buttery, jammy approach. :^)

Both are available in any supermarket here! :o)

Stove bottom muffins are a thing too. they're like a muffin (what you call an 'English' muffin) but because they're cooked on the bottom of a cooling oven after baking, they're lighter and fluffier in texture.

I think I might have to go on a trip just to investigate, one of these days. (maybe when we have a *slightly* better handle on this pandemic)

They are mostly a vehicle for delivering butter and jam to my face, yum! :^D

I believe it!! A friend of mine gave me some fresh ones once and I had the, "OH - THIS is what they're supposed to taste like!" experience. :^)
