Meal Prep Sundays, extended version [food]

Got started yesterday:

-Rice and beans for this gringa forever
-Strawberry jam cake, from Rustic Fruit Desserts. This is the cookbook that brought me lemon rhubarb buttermilk bundt cake; [personal profile] annikusrex gave me a copy of the cookbook for Christmas and I can tell it's a keeper.

Today:
-The usual Dad's pancakes (buttermilk, with Herman)
-Sourdough dinner rolls. These were delicious. I used rye and whole wheat flours.
-Wild rice soup with wild mushrooms from Foraged & Found. I pressure-cooked the wild rice, which worked well.

I'm glad I went grocery shopping yesterday, when it was chilly but clear. Today was a freezing rain day, and temperatures are going to plummet this week. I may have to switch to YakTrax and the bus for getting to work.

I have teeny (1.5 L) and semi-teeny (3 L) Hawkins pressure cookers, and they make weird rice mixes practical parts of my diet. Total cooking time under half an hour (15 mins cooking, ~10 mins cooling) instead of an hour-plus. Also less doubt about outcomes.

So encouraging noises about pressure-cooking rice from this corner!

Weather's already impressively blizzard-like hereabouts. Hope things don't get too unpleasant there!
